Classic cutlets with greens

INGREDIENTS

  • 500 g of beef pulp
  • 700 g of pulp of fatty pork
  • 150 g white stale bread
  • 70 ml of milk
  • 2 yolk
  • 1 large onion
  • 2 garlic cloves
  • 1 medium bunch of cilantro or parsley
  • flour
  • melted butter
  • salt and freshly ground black pepper

STEP-BY-STEP PREPARATION FOR PREPARATION

Step 1

Cut off the crusts from the bread, cut the crumb into pieces and soak in milk for 7-10 minutes. Finely chop the onion and garlic and fry in melted butter over low heat, 10 minutes. Cut the parsley as small as possible.

Step 2

Cut the beef and pork into medium pieces, pass through the meat grinder. Hand mix the minced meat with onion-garlic mass, parsley, bread with milk, yolks and 3-4 st. l. water. Salt and pepper.

Step 3

Beat the minced meat, collecting it into a lump and throwing it with force on the work surface. After 5-7 minutes. beating the minced meat should stop flying into pieces. Cover and refrigerate for 30 minutes.

Step 4

Form round plump cutlets with wet hands. Dip the cutlets in flour, shake off the excess.

Step 5

Heat oil in a large, heavy skillet. Fry the patties over high heat on both sides until golden brown, then bring until tender over low heat, covered, turning from time to time.
