Vegetarian bean soup

I recommend that you sate this soup with taste, so use different types of it. You can buy a package with different types or mix a few yourself. Be sure to soak the beans for the night in cold water, then it will quickly boil, you do not have to bother with cooking for several hours. Soup can be served immediately, and also stored in the refrigerator.

Ingredients:

  • Beans - 450 Grams (mix)
  • Vegetable oil - 2 Tbsp. spoons
  • Onions - 1 Piece
  • Garlic - 2 Cloves
  • Carrots - 4 Pieces
  • Celery stalk - 3 Pieces
  • Water - 6 Glasses
  • Tomatoes - 400 Grams
  • Cumin - 1 Teaspoon
  • Oregano - 1 Teaspoon
  • Paprika - 0,5 Teaspoons
  • Cayenne Pepper - 1 Pinch
  • Salt, pepper - To taste
  • Apple Cider Vinegar - 2 Teaspoons

How to cook Vegetarian Bean Soup

1. In a large pot, put the beans, pour it with water and leave for the night.

2. Peel the onions and garlic. Cut the onion into cubes, chop the garlic. In a saucepan, heat the vegetable oil, place onion and garlic, fry until soft.

3. Cut small pieces of carrots and celery. Put the vegetables in a frying pan to onions and garlic, fry about 4-5 minutes.

4. The previously soaked beans should be washed and put into a saucepan.

5. Pour the beans with water and send the pan to the fire.

6. Bring everything to a boil and cook over low heat for X minutes.

7. Peel the tomatoes from the peel and cut them finely (or use canned ones), add the tomatoes and all the spices in a saucepan.

8. Boil the soup for about 20 minutes.

9. At the very end, add the vinegar and taste salt, decorate the soup with herbs.

10. Ready soup serve immediately or cool and store in the refrigerator 1-2 day.
