Solyanka with pickled mushrooms

As they say, the hodgepodge does not need advertising! One of the most commonly ordered soups in cafes and restaurants! Men just love it. Make them happy and cook soup at home with pickled mushrooms.

Description of preparation:

You can take any pickled mushrooms absolutely anything, be it home mushrooms or champignons from the store. In any case, it will turn out very tasty! If the mushrooms are quite large, then cut them into pieces. Additionally, you can add olives to the soup. I tell you how to cook a hodgepodge with pickled mushrooms.

  • Pork ribs - 700 Grams
  • Salami sausage - 300 Grams
  • Boiled sausage - 300 Grams
  • Pickled mushrooms - 400 Grams
  • Pickled cucumbers - 2-3 Pieces (or pickled)
  • Onion - 1 Piece
  • Tomato paste - 1-2 tbsp. spoons
  • Vegetable oil - 2 tbsp. spoons
  • Water - 2,5 Liters
  • Salt - To taste
  • Lemon - To taste (for serving)
  • Peppercorns - To taste
  • Bay leaf - 2-3 pieces

How to cook “Solyanka with pickled mushrooms”

Prepare all the necessary ingredients.

Cut ribs in portions, rinse. Pour clean water into the pan, put the ribs. Add peppercorns and bay leaf. Simmer after boiling for 1-1,5 hours. Salt to taste. Do not forget that sausage will also add salinity to the dish.

Filter the prepared broth. Remove the meat from the ribs or leave whole.

Heat vegetable oil in a pan, fry chopped onions, then add chopped salami with slices. Fry a little.

Then add slices of cooked sausage.

Sauté and add the tomato paste. Stir and sweat for 1-2 minutes.

Lastly, put the mushrooms strained from the marinade and chopped cucumbers in the pan.

Stir and pour in a few soup ladles. Bring to a boil, lower the heat and then darken under the lid for 10-15 minutes.

Pour the frying into the broth with ribs, boil and simmer for 3-5 minutes over low heat.

Solyanka is ready! Serve with fresh herbs, a slice of lemon and sour cream.
