Warming autumn soup

Ingredients:

  • Pumpkin - 300 Grams
  • Zucchini - 500 Grams (young)
  • Jerusalem artichoke - 250 Gram
  • Carrots - 1 Piece
  • Onion - 1 Piece
  • Chicken - 150 Grams (smoked)
  • Cheese - 50 grams (hard varieties)
  • Salt - To taste
  • Hot red pepper - To taste
  • Vegetable oil - 3-4 Art. spoons
  • Water - 1 Liter (or broth)
  • Parsley - 1 Bunch
  • Lemon Basil - To taste (for serving)

How to cook "Warm autumn soup"

Wash vegetables, clean. Pumpkin cut into small cubes.

Also cut the remaining vegetables.

Cheese grate on a fine grater, chicken cut into fibers, chop parsley.

In a saucepan with a thick bottom, heat the oil. Fry the vegetables in the following order: pumpkin and carrots for 5 minutes, stirring; then add the onion and zucchini, cook another 2-3 minutes.

Pour in water or broth, bring to a boil and cook over low heat for 5 minutes.

Add chicken, cheese, bring to a boil.

Add chopped greens, salt and pepper to taste, remove from heat.
