Duck liver salad

The incredible combination of fatty and juicy roasted duck liver with the sourness of apples and the freshness of cucumbers is so great that you write the recipe in your culinary notebook!

The dish is prepared in minutes, you need about 8-10 minutes to prepare it, but remember that the duck liver is not salted before frying, otherwise the salt will draw out the juice from the offal and the liver will turn out to be rather dry.

Ingredients:

  • Duck Liver - 120 Grams
  • Cucumber - 1-2 Pieces
  • Apple - 1-2 Pieces (sweet and sour)
  • Green onions - 1-2 Pieces (stem)
  • Dill - 2-3 Pieces (stem)
  • Apple Cider Vinegar - 0,5 Teaspoons
  • Salt - 3 Pinches
  • Ground black pepper - 1 Pinch
  • Olive oil - 2 tbsp. spoons (1 tablespoon - for frying, 1 tablespoon - for salad)

How to cook "Salad with duck liver"

Prepare the indicated ingredients.

Wash the duck liver and pat dry with a paper napkin. Heat the pan and pour vegetable oil into it. Reduce heat to minimum. Put the duck liver and fry on one side for about 2 minutes until golden brown.

Gently turn over, cover the container with a lid and put out the offal for about 10 minutes on the 4-5 for minimum heat, so that they are perfectly prepared inside.

Rinse the cucumbers, cut the tails on both sides of the vegetables and cut them into half rings, pour into a bowl.

Peel the apples of sweet and sour varieties. Cut into quarters, cut the seeds and cut into slices. Sprinkle the slices with apple cider vinegar or lemon juice so that they do not darken. Wash the green onions, dill and chop. Add in a bowl of cucumbers apple sliced, greens, salt and ground black pepper.

Mix gently, put on a plate and drizzle with olive oil.

Put warm fried duck liver on juicy fruit and vegetable “pillow”. Lightly salt it.
