Azerbaijani dolma "Three sisters"

I will tell you about the recipe of not exactly traditional dolma, namely how to prepare the Azerbaijani dolma "Three Sisters". It differs in its type of cooking and serving, the dish is delicious and juicy.

Description of preparation:

For the filling I use lamb (traditional version), if there is none, then it can be replaced with other types of meat. The prepared dish turns out fragrant, juicy and satisfying. The stuffing stuffed with eggplant, peppers and tomatoes (from the name "Three Sisters").

Ingredients:

  • Eggplant - 6 Pieces
  • Tomato - 6 Pieces
  • Pepper - 6 Pieces
  • Sunflower oil - To taste
  • Salt and black pepper - To taste
  • Lamb - 0,7 Kilograms
  • Onions - 1 Piece
  • Salad pepper - 1 Piece
  • Basil - 1 Bunch
  • Chickpeas - 0,5 cups

How to cook "Azerbaijani Three Sisters" dolma "

1. Eggplant I use small. I wash vegetables, cut off their peduncle. I make a deep incision along the length, but I do not cut through the vegetable to the end.

2. In the pot I pour the water, bring it to a boil, after that I lower the eggplant into the water and cook them for 2 minutes. I take out and put the vegetables on the plate. As soon as they cool, I scrub their flesh with a spoon.

3. My peppers, I cut their bonnet from them, I do not cut it completely. Carefully clean out seeds and internal membranes.

4. I cut my tomatoes like a pepper, cut off the bonnet, I clean the flesh with a spoon.

5. I clean and finely chop the onion, cut the green pepper and a bunch of basil, boil the chickpeas. Minced fry in a pan with the addition of pulp of tomatoes, onions, peppers and basil, taste salt and pepper. I mix fried vegetables with boiled chickpeas, stuffed vegetables stuffed, stuffed with hats and spread in a frying pan with a thick bottom and high sides, pour in vegetable oil, cook under the closed lid 40-50 minutes (I pour a little water, if necessary).

6. Ready vegetables should be soft and juicy, I shift them to a dish and serve them to the table.
