Garlic Tomato Soup

I share a simple recipe how to cook a soup of tomatoes roasted with garlic. From a simple set of products you get a very fragrant, tasty and healthy soup. You can add various additives to it: seeds, crackers, hard cheese or feta cheese, sour cream or Greek yogurt.

Ingredients:

  • Tomato - 1 Kilogram
  • Garlic - 2-3 Cloves
  • Onions - 1 Piece
  • Bulgarian pepper - 1 Piece
  • Olive oil - 2 tbsp. spoons
  • Salt - To taste
  • Ground black pepper - To taste
  • Hot red pepper - To taste

How to cook "Soup of roasted garlic tomatoes"

Turn on the oven to 220ºС (425ºF). Prepare the necessary products. Wash vegetables, peel onions and garlic.

Pepper cut into strips, onions - rings, chop garlic, tomatoes - in half. Spread vegetables on a baking sheet, salt and pepper, pour with olive oil. Bake them in an oven preheated to 180 degrees for 30 minutes until the tomatoes are soft. Thin slices of garlic will be cooked earlier, remove them from the oven immediately after browning.

Cool baked vegetables a little. Remove the peel of tomatoes, put the vegetables in a bowl. Punch with the immersion blender until mashed. Salt and pepper to taste.

Serve with pumpkin seeds, fresh herbs, cheese or bacon, sour cream, crackers. Enjoy your meal!
